Ingredients: For the Crust: – 1 1/2 cups all-purpose flour – 1/2 teaspoon salt – 1/2 cup coconut oil, solid – 4-6 tablespoons ice water


For the Filling: – 2 cups mashed sweet potatoes (about 2 large sweet potatoes) – 1 cup full-fat coconut milk – 1/2 cup brown sugar – 1/4 cup maple syrup – 2 tablespoons cornstarch – 1 teaspoon vanilla extract

– 1 teaspoon ground cinnamon – 1/2 teaspoon ground nutmeg – 1/4 teaspoon ground ginger – 1/4 teaspoon ground clove – 1/4 teaspoon salt

Prepare the Crust: – In a large bowl, whisk together the flour and salt. – Add the solid coconut oil and use a pastry cutter or fork to cut it into the flour until the mixture resembles coarse crumbs.

Prepare the Sweet Potatoes: – Preheat your oven to 375°F (190°C). Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for about 45-60 minutes, or until they are very tender.
