For the Roasted Zucchini: – 2 medium zucchinis, sliced lengthwise into 1/4-inch thick strip – 2 tablespoons olive oil – 1 teaspoon garlic powder – 1 teaspoon dried oregano – Salt and pepper, to taste

For the Sandwich: – 4 slices of your favorite bread (ciabatta, sourdough, or whole grain work well) – 1/2 cup hummus (store-bought or homemade) – 1/4 cup crumbled feta cheese (optional, omit for vegan) – 1 ripe tomato, sliced – 1/2 red onion, thinly sliced

Instructions: 1. Roast the Zucchini:Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Arrange the zucchini slices on the prepared baking sheet. Drizzle with olive oil and sprinkle with garlic powder, dried oregano, salt, and pepper. Toss to coat evenly
