Keto-Friendly Slow Cooker BBQ Dinner

Barbecue enthusiasts may scoff at us when we suggest this slow cooker pork recipe with a BBQ flavour that is keto-friendly. We have day jobs,   

hungry children to feed, and no backyard BBQ pit, so we can't worry about that.  

We discovered a method to achieve comparable flavours and texture with bone broth and a slow cooker,  

even though we are aware that smoke is essential for breaking down the fat that gives the pig butt or shoulder its flavour and moisture.  

This dish is ideal for a hectic weeknight for several reasons: it's one of the best keto recipes we've ever tried, it requires very little active cooking time,  

and it makes for a versatile pork that can be used in a variety of ways. This pork with slaw can be eaten as a high-protein, low-carb dish or wrapped in a low-carb tortilla to make a keto taco.  


For pork 2½-3 pound boneless pork shoulder 1 tsp chilli powder 1 tsp ground cumin 1/2 tsp salt ¼ tsp chipotle or cayenne powder 1/2 cup beef bone broth or water Three tablespoons cider vinegar  


For slaw Makes 4 cups ½ cup keto mayo 2 Tbsp thick cream 2 tablespoons lemon juice Add 1 tablespoon of erythritol and 1 tablespoon of white vinegar. 1 seeded and minced jalapeño pepper 1 tsp celery seeds salt and pepper 4 cups shredded cabbage or coleslaw mix
