Buffalo Cauliflower for Tacos


– 1 head Cauliflower, Broken Into Floret – 2 Tablespoons Olive Oil – ½ teaspoons Salt – ¼ cups Butter – ⅓ cups Hot Wing Sauce, Plus More To Taste – 1 teaspoon Cornstarch


Preheat oven to 450ºF. Toss cauliflower with olive oil and salt on a baking pan. Roast in a single layer for 15 minutes.  

Meanwhile, make Buffalo sauce. Put butter and spicy sauce in a small pan over medium heat.   

Dissolve cornstarch in 1 tablespoon of water and pour into pan.   

Stir buffalo sauce until blended and simmering. Taste, and add more hot sauce  

or water 1 tablespoon at a time if the sauce thickens.   Stop cooking the sauce.  

Take cauliflower out of the oven after 15 minutes and pour half the sauce over the pan.   

Stir cauliflower in the sauce to coat, then spread in one layer again and return to the oven for 15–20 minutes until brown and crispy.
