Coca-Cola Cake

Ingredients: 2 cups all-purpose flour, 2 cups sugar, 1 teaspoon baking soda, 1/2 teaspoon salt, 1/2 teaspoon ground cinnamon  

1 can (12 ounces) cola, 1 cup cubed butter, 1/4 cup baking cocoa, 2 big eggs at room temperature, 1/2 cup buttermilk, and 1 teaspoon vanilla extract.  

DIRECTIONS

Preheat the oven to 350°. Grease a 13 x 9-inch baking pan.  

In a large bowl, combine the first five ingredients. In a small saucepan, combine the cola, butter, and cocoa. Bring to a boil, stirring occasionally.  

Add to the flour mixture and whisk until barely wet.  

In a separate bowl, whisk together the eggs, buttermilk, and vanilla until smooth; add to the flour mixture, stirring constantly.  

Transfer to the prepared pan. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.  

Prepare the glaze around 15 minutes before the cake is done.  

In a small saucepan, bring the cola to a boil and cook for 12-15 minutes, or until the liquid is reduced to 1/2 cup.   

Stir in the butter and cocoa until melted, then remove from the heat. Add confectioners' sugar and whisk until smooth. Pour quickly over the hot cake.
